Vargas Grill pulls down its pin-ups

He's opened up so many new concepts in the past year that it was bound to happen. But we didn't expect his flagship restaurant to go Tango Uniform. That's right, Vargas has sold his pin-up plastered, self-title Vargas Grill on Donghu Lu. The space was promptly scooped up by former Gramercy Tavern sous chef Austin Hu. Hu who will be re-opening it in a few months under the name Madison. We can only assume, he'll strip off all the pin-up girls.

Newly-appointed Vargas chef Eric "Big E" Brown has moved to Casa 13 and has performed an impromptu menu overhaul. Expect a broader swath of the Mediterranean with specialties like cioppino and Morroccan chicken.
