But we didn't expect his flagship restaurant to go Tango Uniform. That's right, Vargas has sold his pin-up plastered, self-title Vargas Grill on Donghu Lu. The space was promptly scooped up by former Gramercy Tavern sous chef Austin Hu. Hu who will be re-opening it in a few months under the name Madison. We can only assume, he'll strip off all the pin-up girls. Newly-appointed Vargas chef Eric "Big E" Brown has moved to Casa 13 and has performed an impromptu menu overhaul. Expect a broader swath of the Mediterranean with specialties like cioppino and Morroccan chicken.
